The non-gaming Vdara Hotel & Spa in Las Vegas launched a new organic wine program for groups last month to further differentiate itself on the Las Vegas Strip.
The 1,500-room hotel is now serving Bonterra’s 100% organic and biodynamic wine in four varietals: chardonnay, sauvignon blanc, merlot and cabernet.
This complements the ongoing evolution in Vdara’s kitchens, where fair trade, organic and local food has been a major part of the corporate mission since the hotel opened. All of the menus are presently undergoing revision for the second half of 2014, with an even greater emphasis on organic and gluten-free ingredients.
Furthermore, with the new wine in house, it opens up the opportunity for educational events about organic pairing meals, which is something a little bit different. Pairing notes can be provided by both Vdara’s F&B staff and outside organic wine experts.
“What we’re finding in the meeting and convention planning world is that the standard cocktail receptions, breaks, lunches and dinners are changing quite quickly,” says Tony Yousfi, VP of sales for Vdara and adjoining ARIA Resort. “Our new wine program is an experience designed to resemble a meal you might have at a bed and breakfast in Napa, but taking palce in Las Vegas and customized to the meeting group.”
Meeting space in a single room at Vdara maxes out at 300 diners but Yousfi says this type of event is typically best suited for 150 pax or less. Venues option include the Vinoli Ballroom, Silk Road event space or Bar Vdara.
Vdara’s F&B Director Michael Vorsanger says, “Our goal for this year is to deliver a more boutique experience, which aligns with the smaller batch Bonterra wines, all the way down to their labels made out of recycled paper.”
