Just as they require creative programs to stay engaged, meeting attendees crave imaginative catering ideas that combine delicious food and the latest emerging culinary trends. Today’s savvy catering chefs aim to exceed these expectations by creating innovative and experiential dishes.

To cater to rising food trends, our Disney culinary teams have created ways to infuse food and lifestyle into unique experiences that excite meeting attendees.

Below are a few examples from recent events that highlight how our catering teams strive to inspire attendees through innovative culinary experiences.

Catering an event is about the end-to-end experience, which includes food and beverage as well as location, program content and entertainment, among other elements.

At Disney’s Contemporary Resort, a chef’s table scenario invited our catering team to speak with attendees about the ingredients, seasonality and sustainability of that evening’s menu. Attendees, many of them budding foodies, said they loved this person-to-person interactive approach.

To stay ahead of the pack in the meeting hospitality arena, catering teams must be innovative and think outside the box.

Our Disney team wanted to create an innovative breakfast experience with traditional ingredients. The team developed a unique milk station that featured specially flavored milks inspired by popular breakfast cereals. Another distinctive touch included red velvet, Mickey-shaped pancakes. These small adjustments brought a little magic to an ordinary breakfast offering.

Use special dietary requests to inspire the entire experience and personalize the event.

More and more, our teams are seeing the rising demand for special or unique dietary requests. We want all of our guests to feel like a priority, not as an afterthought. We spend a great deal of time exploring and developing fresh ways to surprise and delight guests with diet restrictions – from experimenting with various vegetable and seasoning combinations to gluten-free pastries and breads. One time we served cactus tacos, which drew raves for being an inspired vegetarian alternative.

Whether you want to create an interactive session or use state-of-the-art technology to tell your culinary story, creating an experiential dining experience can take form in a variety of ways. To stay relevant in the meeting and event arena, catering chefs need to spend a great deal of time turning the ordinary into the extraordinary. The more memorable the meal, the more memorable the meeting.
