As part of its 60th anniversary celebrations, Caesars Palace will welcome Barcelona’s SIPS Drinkery House to VISTA Cocktail Lounge for a limited-time pop-up from Oct. 31 through Dec. 31.

For groups, the experience offers an easy add-on to a meeting day, giving attendees a chance to gather over inventive cocktails without leaving the resort. SIPS, which was named The World’s Best Bar by The World’s 50 Best Bars in 2023 and ranked No. 3 globally in both 2024 and 2025, is known for combining creative mixology with playful presentation.

Founded by bartenders Simone Caporale and Marc Alvarez in 2021, SIPS takes a flavor-first approach to cocktails, using innovative techniques while drawing on familiar ingredients and flavors.

During the Las Vegas pop-up, VISTA guests can sample signature SIPS cocktails, including the Purple Rain, a modern take on a whiskey sour made with bourbon, wild sour honey and beetroot. The Mosaic pairs pisco brandy with aromatic woods from the Amazon rainforest and arrives in a painted glass inspired by Barcelona’s modernist art movement.

The temporary takeover could work particularly well as a post-meeting gathering, welcome reception alternative or informal incentive-group outing. With VISTA open until 2 a.m. daily, planners can also build the experience around dinner, entertainment or other Caesars Palace activities.

Located near Amalfi by Bobby Flay and Dominique Ansel Las Vegas inside Caesars Palace, VISTA Cocktail Lounge is open Monday through Thursday from 2 p.m. to 2 a.m. and Friday through Sunday from 10 a.m. to 2 a.m.

Reservations are not required, although tables can be reserved. The SIPS pop-up runs during VISTA’s regular operating hours through Dec. 31.
