ONE | GT, a new luxury hotel and residential development in the center of Grand Cayman, officially started welcoming guests last week and is the island’s only member of Small Luxury Hotels of the World.

The 10-story development offers a more urban take on Caribbean luxury, shifting the focus away from the traditional beachfront resort experience. Instead, ONE | GT puts guests in the middle of the island’s commercial, cultural and dining scene, with sweeping views over George Town and the waterfront.
Though newly opened, the project has already earned three International Property Awards, including honors for hotel architecture and hotel design.
A Modern Island Stay
ONE | GT combines hotel accommodations with residential living, bringing together 97 condo-style hotel suites and 80 private residences under one roof. The concept is designed for a mix of travelers, business visitors and long-term residents looking for a more connected experience in the city.
Suites range from one to three bedrooms and feature full kitchens, spacious living areas, spa-style bathrooms and private balconies. Guests also have access to services such as grocery pre-stocking, valet parking, wellness programming, a fitness center with Technogym equipment and shuttle transportation.
The property’s amenities include an Oasis Pool on the third floor, along with the island’s first rooftop restaurant and bar paired with an infinity-edge pool overlooking Grand Cayman.
Dining & Events Take Center Stage
Under the direction of Executive Chef René Cahane, ONE | GT introduces three distinct dining venues designed to serve both hotel guests and locals.
- Perle, the hotel’s signature French-Mediterranean restaurant, offers a seafood-focused menu complemented by a curated wine list. The space is positioned as a destination for business dinners, celebrations and upscale evenings in George Town.
- Byū, the rooftop restaurant and bar, pairs panoramic views with an Asian-inspired menu featuring sushi, sashimi, robata-grilled dishes and shareable plates. The venue also offers an extensive cocktail and sake program and is expected to become a lively nightlife spot after sunset.
- At street level, Café Bellini brings an Italian-inspired café and bakery concept to the property, serving espresso drinks, pastries and lighter fare throughout the day.
Beyond dining, ONE | GT includes spaces for corporate gatherings, executive retreats and private events, with settings designed to balance contemporary style and island atmosphere.
In the Heart of George Town
Often called the “Wall Street of the Caribbean,” George Town is home to a large concentration of international banks and financial firms, while also offering galleries, restaurants, nightlife and waterfront activities. ONE | GT sits within walking distance of the financial district and close to several of the island’s major attractions.
Seven Mile Beach is about a six-minute drive away, while dive sites, marinas and the shopping and entertainment district of Camana Bay are all nearby.
