For years, breakfast at meetings was a checkbox: coffee, carbs and a slow drip of arrivals. But breakfast is undergoing a remarkable transformation in the events world.

Now the first meal of the day is doing more than providing fuel. It’s setting tone, driving engagement, reinforcing brand and even delivering measurable ROI. Attendees now expect every touchpoint to be intentional, customizable and worth their time, and that most definitely includes breakfast.

As Chef Boris Seymore put it during the “Breaking the Fast” session at this year’s Catersource Cater+Event 2026, the problem has historically been that breakfast menus are simple and not designed — but the shift now is toward thinking about breakfast as design, not just recipes, so it becomes a centerpiece rather than an afterthought.

To whet your appetite, here are a few elevated breakfast options that hit the sweet and savory spot at Cater+Event this year:

  • Chicken and waffles reimagined with gourmet twists — spiced syrups, artisanal batters, hot honey and truffle butter — turning a comfort classic into a statement dish.
  • Elevated bacon variations like “Million Dollar Bacon” candied with brown sugar and spices, or chocolate-dipped spicy bacon.
  • Gourmet Pop-Tarts® crafted by pastry chefs with flaky, buttery crusts and fillings ranging from seasonal fruits and rich custards to savory options like short rib and red wine.

Here are the seven trends redefining breakfast—and how to use them.

  1. From Meal Block to Program Block. Forget the meandering buffet line and use the blank space that was breakfast as another canvas for content. For example, try hosted networking tables, sponsored tastings and facilitated discussions or peer meetups.
  2. “Brain Fuel” Is the New Buffet. We’ve all experienced the mid-morning crashes an overindulgence in sugary pastries at breakfast can instigate.
